I am sitting in my kitchen eating this spectacular specimen de sandwich and listening to the latest from Yeasayer. Which I love.
And thank goodness for that because my current memory of the band is a jamfest at Pitchfork with my brother and it was raining but as they started into the chorus for Sunrise, not kidding, the sun came out. And everyone got the best kind of jazzed.
Sandwich: Lightly toasted fruit and nut bread (Fox & Obel by way of Pastoral), light smather of herbs de Provence goat cheese on one side and Dijon mustard on the other. Then baby spinach on top of the mustard and thinly sliced apple on the goat cheese. Then leftover roast chicken. Then get it together and delight in the merry bite.
